Michaelle Stidham

Layered Painting   Airbrushing… sponging… painting… we do it all in this class!  The layers keep on going as you create a stunning cake with wonderful depth and detail.  Leave class with a completed cake that will amaze your friends and family!

Gelatin Butterflies – Learn to make stunning wireless butterflies in gelatin.  These were the hi-light on Michaelle’s cake that won 2nd place at the 2007 Mid-Atlantic Cake Competition.   She will share her secrets with you so you can create these simply stunning butterflies yourself now. 

3-d brush embroidery – Add another dimension to your cakes, and it’s so impressive looking – your customers will be amazed!  Create a stunning floral arrangement in sugar paste, but for that added “WOW” – the flowers look like they are embroidered!

Quilting in Sugar - Do you love the patterned look of quilts?  This class is perfect for you. You'll learn techniques in fondant to make that perfect quilt – only she’s kicked things up a notch! J  Michaelle will show you how to make it look like there’s actually batting under the fondant – just like a real fluffy quilt.

Diane Simmons

Stringwork – students will learn how to create the dramatic stringwork seen on so many of the show cakes in the premier cake competitions around the country.  Diane will show you how to do Australian as well as South African styles (with and without a bridge), and time permitting, will also show you how to create the “floating” collars (where the sugar plaque, collar, disc, etc. is suspended in mid air above delicate stringwork.) This technique is not as difficult as you might think… come learn the secrets to add that incredible wow factor to your cakes!  (Please note - there is simply not enough time for students to learn the technique and expect to finish an entire cake in 2 hours.  While you should have a fair portion complete by the end of scheduled class time, this was scheduled at the end of the day intentionally so if you wish to stay in the room and continue working – you may do so! J)

Cookie Creations – join us to learn how to create dramatic cookies using a variety of mediums and techniques.  We will be using royal icing, rolled fondant, piping gel, and more.  Some of the methods we will be learning include flooding, painting, layering, and more!

Decorative Shoes – come learn how to create sugar paste and chocolate shoes for shower toppers, wedding favors, or even to create a shoe box cake w/ a designer shoe atop the box.

Wedding Favor Boxes – come learn how to create both sugar paste and chocolate boxes to fill with various candies, cake balls, or truffles to offer your customers as wedding favors.

The Art of Patchwork Cutters– learn how to use the latest rage in cake decorating supplies… Patchwork Cutters.  Discover the tricks to use the cutters successfully, and leave class with a completed cake!

Wedding Cake Construction DEMO – come in, sit back and relax as Diane assembles a wedding cake – giving several useful tips and secrets for several different stacking and pillaring methods.

Rolled Fondant Basics *3 HOUR CLASS! – Learn to cover a SQUARE cake with fondant - you'll never be afraid of those corners again!  We will also do beautiful but simple draping, and learn easy ways to make elegant lace pieces.  I’ll even teach you the simplest fondant rosebuds you’ll ever make.  Time permitting (depending on how fast we can all work!  LOL!), we'll also do a dress bow.  This class is perfect for the decorator just beginning to work with fondant - or the decorator who has tried fondant and been frustrated!

Buttons & Jewelry Mold Making – Learn to use a quick, easy and inexpensive product that is readily available to make your own molds.  We’ll do fancy buttons and broaches – and maybe some shells or other items.  If you have fancy buttons or a piece of jewelry you’d like to try, bring it with you.  If you have priced the ready-made molds available; you’ll really appreciate this class.  (Note:  The button molds you make in this class could be very useful to you in several of the other classes offered.)

Autumn Gumpaste Arrangement (2 pt class) We will create pumpkins. Cattails, bittersweet, oak and maple leaves.  The leaf technique you learn here will apply to any type of leaf.  You will leave the class with a mini-basket full of these beautiful fall items.

Session One:  We will be creating most of the GP items.  They will need to dry overnight before the next step.

Session Two:  We will be completing the items, dusting them, and assembling them in a fondant basket.

3-d Gift Bag - This is a repeat from last year by request!  We'll use rolled fondant to cover a shaped cake and creat a gift bag that the student can then customize to suit his/her fancy - turn it into a shopping bag, a tote bag or a baby bag.  Plenty of opportunity to be creative and use your imagination here!

Fondant Critter Modeling - We will create adorable little edible critters using fondant - perfect for baby or children's cakes.  These may include pandas, sheep, pigs, rabbits or others – who knows!  You will fall in love with them!  (These critters will be different than those taught last year!)  And this class is a  guaranteed giggle session!

3-d Pursecome learn to make a 3-d purse… complete with all the fancy frills or design elements of the name brand handbags to look like it just stepped off the runways in Paris!

 

Flag Cake join Connie as she guides you step by step to create your own stunning flag.  These make amazing centerpieces for our military welcome home parties!!!  You will learn how to create this both with and without an airbrush (since we realize not all decorators have access to an airbrush. J)

Cakeballs 101-  Learn to create delicious bite-size treats that are the latest rage and everyone will LOVE.  You will also get many idea’s for different ingredient & flavor combinations, coatings, fun options for holidays & special events, and creative packaging ideas to wow your family, friends & customers.

 

Cooler Cake w/ Poured Sugar Bottle – learn to make a stunning cake to look like an open cooler w/ ice and a bottle of beer/soda sticking out.  Sherry will be explaining how to make the mold for the bottles, and taking you through the steps to pour your own bottle to look like glass, as well as create the edible “ice”.

Oriental Stringwork - This English technique of upside-down stringwork is a lot of fun and easier than you may think. Always an attention getter at shows and can be modified for practical application as a plaque on special cake orders. Each student will make a small sample cake dummy with multiple strings and tiny flowers  All supplies included.

Funky Fondant Trims -  Fast, fun and simple fondant techniques that can turn any cake into a whimsical creation. We’ll play with bright colors, texture tools and simple cutters. This class is jammed-packed with fun ideas that will give you plenty of inspiration for cakes plus lots of samples to take home.  All supplies included

Paris Poodle in Bas Relief - Any young lady would love this Parisian pet on her birthday cake. This fun and charming poodle will be created in fondant in bas relief. We will also make a pink plaque to show it off! Poodles are very popular for little girl’s cakes.  All supplies included.

Potted Strawberries (2 pt class) - In this two-part class, each student will create a planter made from sugar and “planted” with wired gum-paste strawberries, leaves and blossoms. All the pieces will be made during the first session and colored and assembled during the second to allow for drying time.  All supplies included.

Eyelet Doily Fondant Cake - This is a great way to create a very special cake. Each student will make a small cake dummy with an eyelet border and eyelet doily topper. This is a technique that is easy and practical to use on cakes for many occasions such as weddings, birthdays, christenings and more. Fondant eyelet pieces can easily be used to accent buttercreme-iced cakes.  All supplies included.
